Clean and wash the octopus. In the pressure cooker, boil for 20-25 minutes with water with vinegar added. When it is cooked, strain it and let it cool. Clean the octopus’s red skin and shells under running water.
Slice the head and arms thinly. Clean and mince the spring onion. Clean the peppers and chop finely. Clean and chop the parsley. Peel the tomato and cut it into cubes.
Mix scallions, green peppers, parsley and tomatoes in a large bowl. Add olive oil, salt and lemon juice and mix.
Blend the mixture you prepared with the boiled octopus meat. Take it on a serving plate and sprinkle with capers. Garnish with chives and serve cold.
